From the point of view of flavour and aroma, it has a characteristic strenght, an "extreme" blue, this is why it is called "the heretic". A complex and very interesting cheese from an aromatic point of view.
Made with techniques and means that are not modern but artisanal, such as breaking the curd with a thorn or piercing the shapes with a steel pin.
