Bitto DOP - Castellanza Formaggi
Bitto is the best known Valtellina PDO cheese, it is produced exclusively in the mountain pastures during the summer, as its centuries-old tradition dictates.
From the first months of maturation it is characterized by a sweet and aromatic taste, more pronounced if produced with the addition of goat milk (from 0 to 10%). The slow aging allows its flavour to become even more lively and intense.
