Asiago Pressato DOP - Castellanza Formaggi

Ancient product of the Asiago plateau, made from cow milk. It bears the synonym of Pressato for the characteristic fact of being chopped, after the extraction of the dough, and then pressed.
The color is white or slightly straw-yellow, and is characterized by marked and irregular holes and the taste of freshly milked milk; it is delicate and pleasing, and pleasantly melts in the mouth leaving an irresistible sweet and slightly acidic note.
